Save the EPS as Illustrator 9 or earlier (CS, CS2, or earlier)

If this does not resolve your problem,
- Select In-RIP Separations in the Setup drop-down menu of the Colors pane in the Print dialog box.
- Select Composite in the Mode dialog and Composite CMYK and Spot in the Setup drop-down menu.
Background:
This is a defect in QuarkXPress 8 and has been scheduled to be fixed in a future release.
Additional Notes:
The term 'Host-based Separations' is used to describe one of the methods QuarkXPress uses to send information to a RIP for printing separation plates for high quality presses. To engage this method, simply choose Separations in the Mode drop-down in the Colors pane of the Print dialog.
